Easy & Delicious Slow Cooked Lasagna Soup for a Crowd

I focus all my recipes on three main principals: Easy Prep, Low Cost, and Family Approved for even picky eaters! Follow along and enjoy a delicious meal for your family!

Slow Cooker Lasagna Soup : Ideal for a Large Family, Party, or Bulk Meal Planning(Approx. 18 Servings)

Items Needed:

  • 8 QT Slow Cooker (Half the Recipe for smaller slow cookers)
  • Knife & Cutting Board (Or opt for Frozen Pre-Chopped Veggies)
  • Measuring Cup

Ingredients:

For The Cheese Mixture: 

  • 1 Lb Mozzarella Cheese – Shredded 
  • 1 Cup Parmesan Flakes (NOT GRATED PAREMESEAN)
  • 32 oz Ricotta Cheese

For The Soup: 

  • 1 lb chopped Fresh or Frozen Carrots
  • 1 Large Yellow Onion – Chopped Fine
  • 3 Roma Tomatoes – Chopped 
  • 3 TBSP Italian Seasoning
  • 2 TBPS Minced Garlic
  • 2 TBSP Beef Bullion 
  • 1 Lb Ground Sausage (Mild or Spicy)
  • 1 LB Lean Ground Beef
  • 45 oz Marinara Sauce 
  • 16 oz Lasagna Noodle – Broken Into 1-1.5″ Pieces
  • 4 Cups of Water Divided
  • Add to taste at the end:
  • Salt 
  • Pepper .

Optional Add Ins:

  • Red Pepper Flakes if you love your food spicy! 
  • Spinach 

Instructions:

PHASE 1:

  • Turn Slow Cooker on High to get it heating up. 
  • Add 2 Cups of Water and all of the seasonings to the Slow Cooker
  • Chop the carrots into 1/8″ rounds- Add to Slow Cooker 
  • Finely dice the onion – Add to Slow Cooker 
  • Chop the Roma Tomatoes into 1/2″ pieces – Add to Slow Cooker 
  • Cook on high for 3 Hours. 
  • NOTE: I cook my onions & Carrots down before adding in everything else to make sure they are nice and tender. I’m odd with textures and don’t want to take the risk of my veggies not being fully cooked in my soup. If you don’t feel the same way about potentially crunching on an onion then by all meals add in step 2 now and cook the whole thing for 4 hours. Then come back for step 3. Totally up to your preference!

This is a great time to do something else! Set your timer and get your cleaning done, enjoy a book, or play with your kiddos! 

PHASE 2:

  • Brown the Ground Beef and Sausage in a skillet. 
  • Add the cooked meat, Marinara Sauce and remaining 2 cups of water to the slow cooker. 
  • Mix everything Together and Cook on High for 1 Hour

PHASE 3:

  • Add the broken lasagna noodles to the Slow Cooker
  • Cook on High for 1 Hour
  • Mix the 3 cheese in large bowl, cover and refrigerate until time to serve the soup. 

SERVING:

  • Spoon the soup into bowls as desired. Add the spinach and a sprinkle red pepper flakes if so desired. Then add 1/3(or more!) cup cheese mixture to each bowl. 
  • Serve with Garlic Bread or Side Salad & Enjoy! <3
